Craving Carnitas

The other day I was craving some Mexican food and so I remembered a recipe I used a few weeks ago when I made carnitas for the very first time on my own. The recipe is extremely easy but the cook time is long. The overall result is well worth the wait, that's for sure.

Enjoy!
Ingredients:
4-5lbs of pork (shoulder or butt)

3-4 cloves of garlic (whole or chopped into 4 sections)
1 can of beer (your choice of brand)
1 bunch of cilantro (stems off)
1 jalapeno (whole)
Salt (to taste)
Crock pot or stew pot

Step 1:
Place meat whole in crock pot or stew pot. Add jalapeno whole, do not chop. Add garlic. Add cilantro, you can chop the cilantro. Add can of beer. Season with salt, about a teaspoon at first. Cover and cook on high for 5 - 6 hours. Or cook on low 8 - 10 hours.

Step 2:
Check the pot about half way through and rotate meat. For more spice break the jalapeno and mix around.

Step 3:
You're done! Pull meat from pot and place in serving dish. The meat should be tender enough to take a fork or tongs and break meat apart or shred.

Serve on corn or flour tortillas with all your favorite fixings.
